We at Capuhealthy, are all about eating healthy without compromising on the taste. One of my favorite quick meals is Quinoa with . Quinoa is a superfood that has so many health benefits. At first, I was hesitant to try it, but now I don’t remember when was the last time I craved rice.
Quinoa is gluten-free and is loaded with so many vitamins and minerals. It’s an excellent source of iron, it also contains vitamin B & E, and best of all it has fiber so it leaves you feeling full and satisfied. Quinoa also contains nine essential amino acids and is considered a complete protein plant food.
If that’s not convincing enough, imagine if you were to add vegetables to a base such as Quinoa to make your body thank you now and for many years to come. The preparation of this great dish is very simple, and you can add whatever you like into it.

Preparation
First prepare the quinoa by bringing the water to boil, adding a hint of salt, and adding garlic to the mix.
Stir in the quinoa, and reduce temperature to low heat.
Gently add chicken, olives, onion, peppers, parsley, and salt into the quinoa. Add the vinegar, lemon juice, and olive oil. Stir until evenly mixed, this dish is served cold or warm.
